what's cookin'?


i wanted to share some yummy things that we have been making at my house.

DD loves to make dessert on american idol night.
this shortbread recipe is so simple, but so delicious.
the first time i had it was at a summer bible school meeting many, many years ago, where a kind woman named gail invited us over to plan. she served this hot from the oven with iced tea. it was amazing. i got the recipe immediately. this is equally wonderful with coffee or hot chocolate. and with only 3 ingredients (butter, sugar, and flour) you can whip it up anytime.
next, i had to try the pioneer woman's spaghetti and meatball recipe.
it was kind of time consuming...i did use all ground beef and store bought breadcrumbs. it was good, but my favorite part was the simple tomato sauce. i will definately use that again.
finally, last night i had a couple of sweet potatoes that needed to be cooked. i only had two, so decided to make mashed sweet potatoes so there would be plenty for the family. i found this recipe on martha stewart's website, but substituted 8th continent vanilla soymilk (that we got at harris teeter for free during super doubles) for the half and half. it was fabulous, the vanilla in the soymilk really added to the flavor.
