i wanted to share some yummy things that we have been making at my house.

DD loves to make dessert on american idol night.
this shortbread recipe is so simple, but so delicious.
the first time i had it was at a summer bible school meeting many, many years ago, where a kind woman named gail invited us over to plan. she served this hot from the oven with iced tea. it was amazing. i got the recipe immediately. this is equally wonderful with coffee or hot chocolate. and with only 3 ingredients (butter, sugar, and flour) you can whip it up anytime.
next, i had to try the pioneer woman's spaghetti and meatball recipe.

it was kind of time consuming...i did use all ground beef and store bought breadcrumbs. it was good, but my favorite part was the simple tomato sauce. i will definately use that again.
finally, last night i had a couple of sweet potatoes that needed to be cooked. i only had

two, so decided to make mashed sweet potatoes so there would be plenty for the family. i found this recipe on martha stewart's website, but substituted 8th continent vanilla soymilk (that we got at harris teeter for free during super doubles) for the half and half. it was fabulous, the vanilla in the soymilk really added to the flavor.

then a barcode shows up on your phone screen and the cashier scans it!

so i was able to use the target printable, the target text, and i also had a manufacturer coupon for $1/2 kraft cheese. the two target coupons came off, but the man. Q didn't even show up :(
but i was too tired to go back in.

When you check out at the grocery store, there's a small machine next to the cash register.
This machine prints coupons, ads, announcements of upcoming promos, and OYNO (off your next order) dollars specific to that store.
Catalina machines are found at grocery stores and more recently, at retail stores like Kmart.
If you're doing a Catalina promo, be sure the machine's green light is on to show that it's working before you ring up your promo items.
Catalina coupons and OYNO coupons that print out are usually good for 2 or 4 weeks after they print.

we really didn't know what to expect.

5 members of our group gathered around a table where we scooped soy, dehydrated vegetables, vitamin powder and rice into a small bag.
then there were kids who would come and pick up the bags, deliver them to another table where they were weighed, and finally heat-sealed.
it was an amazing production!
we were the final shift for the night and the grand total of meals packaged was over 125,ooo.
these will be in haiti within the next 2 weeks.

DH and i had an impromptu valentine's date to the new gagliardo's grill express last night for dinner. DS went to the basketball game and DD got a last minute babysitting offer for her favorite 2 year old.
so, we decided to finally go to gagliardo's.
we have missed it!
we used to love that place when it was open a couple years ago.
we are thrilled that troy and his wife tracy have re-opened the restaurant.
reasons we LOVE gagliardo's:
-it's like 3 minutes from our house. located close to the old hospital.
-we saw so many folks we know, it really is a neighborhood grill.
-the food is amazing and since the food is grilled, there are lots of healthy options, if you choose that route :)
-the remodeled restaurant has the grill right there at the counter where you order. cozy. especially with the snow on friday night.
-with the new set up, the service was super fast. the way they do it now, you walk up to the counter, order your meal and pay, and then sit down and they bring the food to you.
-excellent tea, free refills!
-it's so wonderful to see a family working together.

many of you may remember urgent prayer requests for preston loyd, the 4-year-old who was critcally injured in a lawnmower accident in april 2009.
here's an update from his dad, ashton:

Consider it pure joy, my brothers and sisters, whenever you face trials of many kinds, because you know that the testing of your faith produces perseverance.

I think if we had a choice, we would prefer our faith not be tested. We would much rather say, “Okay God, I am living a pretty good life. I go to church when the doors open. I try to be a good example to those around me. I just try to live my life and do what’s right.” He allows temptations that we must resist. He also allows trials in our way. These we must overcome through the grace of God. The overcoming of these trials produces this perseverance spoken of by James in his opening chapter. Another interesting item: We have so much more perseverance and strength than we can ever realize. Think of the tragedies we read about every day. With each of those tragedies, there is a suffering family. We, as humans, are built to adapt and overcome…God made us that way.

Now, the trial our family has endured is maybe a bit more exaggerated than some. There are more pieces to work through, but the navigating has produced perseverance. Every time I watch Preston, I see his perseverance and it inspires me. When I am down, all I need to do is spend a moment with him to see the true meaning of perseverance. He is such a light.

Many of you have reached out for an update. I have many good intentions of setting a regular time to post, but between home and job, it is difficult. Thanks to each of you for continuing in prayer, because even though the frequency of updates has lessened, our need for prayer has not. We are not at the end of our journey of perfect healing.

Preston continues to make improvements in all areas. Physically, he is miraculous. He runs around and plays like a normal 5 year old. All of his injuries are healing well ahead of any prognosis. Also, his vision continues a slow improvement. I was thinking the other evening as he played alone in his playroom that life and home are slowly but surely returning to normal.

I would ask that you continue in prayer for Preston. We only have one surgery left in the spring. Pray that God will prepare Preston’s body and the surgeon’s hands.

I do thank all of you for your continued support of prayer and outreach. I welcome the calls and emails.

In closing, I want to encourage each of you to persevere through whatever trials you may be facing. We don’t always see how God is working, but He is. Trust in Him and you will persevere.
